Air Fryer Breakfast Burrito Wraps

4 large flour tortillas

6 large eggs

1 cup cooked and crumbled breakfast sausage (or diced cooked bacon)

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (mixed colors)

1/2 cup diced onion

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Cooking spray

Fresh salsa or hot sauce for serving (optional)

Instructions
 

Prep the Filling: In a large mixing bowl, whisk together the eggs, garlic powder, paprika, salt, and pepper. Add in the cooked sausage (or bacon), bell peppers, and onion. Stir until well combined.

    Cook the Egg Mixture: Preheat your air fryer to 350°F (175°C). Lightly spray the air fryer basket with cooking spray. Pour the egg mixture into the basket and cook for about 8-10 minutes, stirring halfway through, until the eggs are fully cooked but still fluffy. Remove and let cool slightly.

      Fill the Tortillas: Lay out the flour tortillas on a clean surface. Evenly distribute the cooked egg mixture onto the center of each tortilla. Sprinkle the shredded cheddar cheese on top of each portion.

        Wrap the Burritos: Fold in the sides of the tortilla over the filling, then roll from the bottom up to form a tight burrito. Make sure to secure the filling as you roll.

          Air Fry the Burritos: Lightly spray the air fryer basket again with cooking spray. Place the wrapped burritos seam-side down in the basket, leaving space between them. You may need to cook them in batches. Air fry at 375°F (190°C) for about 7-10 minutes, or until the tortillas are golden and crispy.

            Serve: Once they are cooked, remove the burritos from the air fryer. Let them cool for a minute, then slice them in half and serve with fresh salsa or hot sauce on the side for an extra kick. Enjoy your delicious breakfast creation!
