1 medium head of cauliflower (about 2 cups, finely chopped)

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (panko for extra crunch)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Olive oil spray (for air frying)

Instructions
 

Prepare the Cauliflower: Start by preheating your air fryer to 375°F (190°C). Cut the cauliflower into florets and steam or boil it until tender (about 5-7 minutes). Drain well and allow it to cool slightly.

    Mash and Mix: Once cool, place the cauliflower in a large mixing bowl and mash it with a fork or potato masher until it’s a chunky puree.

      Combine Ingredients: Add the cheddar cheese, Parmesan cheese, breadcrumbs, eggs, garlic powder, onion powder, smoked paprika, salt, and pepper to the mashed cauliflower. Mix until everything is well combined.

        Form the Balls: Using your hands, form tablespoon-sized portions of the cauliflower mixture into small balls, ensuring they hold together.

          Preheat the Air Fryer: If necessary, give your air fryer a quick preheat to ensure it's at the right temperature for cooking.

            Air Fry the Balls: Lightly spray the air fryer basket with olive oil to prevent sticking. Place the cauliflower balls in the basket in a single layer, making sure they don’t touch each other. Spray the tops lightly with olive oil for extra crispiness.
