Air Fryer Fall Harvest Veggie Wraps

Ingredients
  

1 cup butternut squash, peeled and diced

1 cup Brussels sprouts, halved

1 cup carrots, sliced

1 tbsp olive oil

1 tsp maple syrup

1/2 tsp cinnamon

1/2 tsp salt

1/4 tsp black pepper

4 whole wheat tortillas

1/2 cup hummus

1/2 cup spinach leaves

1/4 cup feta cheese, crumbled (optional)

Instructions
 

Preheat your air fryer to 375°F (190°C).

    In a large bowl, combine the diced butternut squash, halved Brussels sprouts, and sliced carrots.

      Drizzle the olive oil and maple syrup over the veggies, then sprinkle with cinnamon, salt, and black pepper. Toss everything together until well coated.

        Place the seasoned vegetables in the air fryer basket in a single layer. Cook for about 15-18 minutes, shaking the basket halfway through to ensure even cooking. The veggies should be tender and slightly crispy.

          While the vegetables are cooking, prepare your wraps. Lay out a whole wheat tortilla on a flat surface.

            Spread a generous layer of hummus across the tortilla, leaving about an inch of space from the edges.

              Once the veggies are done, remove them from the air fryer and let them cool for a couple of minutes.

                Place a handful of spinach leaves on top of the hummus, then add a portion of the roasted veggies.

                  If using, sprinkle the crumbled feta cheese over the top for added flavor.

                    Carefully fold in the sides of the tortilla and then roll from the bottom up, keeping everything tucked in.

                      Place the wrapped tortilla seam-side down in the air fryer basket and cook at 375°F (190°C) for an additional 3-5 minutes, until the wrap is slightly crispy.

                        Serve warm and enjoy your cozy fall harvest veggie wraps!
