Ingredients

4 large whole wheat tortillas

8 slices of deli ham (preferably low-sodium)

8 slices of cheese (Swiss or cheddar work great)

1 cup fresh spinach leaves

1/2 cup cream cheese, softened

1/4 cup mustard (optional)

1/4 cup mayonnaise (optional)

1 tablespoon fresh dill or herbs de Provence (optional)

1 cucumber, thinly sliced (for crunch)

Salt and pepper to taste

Instructions

Prepare the Spread: In a bowl, mix the softened cream cheese with dill, salt, and pepper until smooth. If using, add the mustard and/or mayonnaise to taste for an extra kick.

Assemble the Roll-Ups: Lay a tortilla flat on a clean surface. Spread a layer of the cream cheese mixture evenly over the tortilla, leaving a small border around the edges.

Layer Ingredients: Place 2 slices of ham horizontally on the tortilla, followed by 2 slices of cheese on top of the ham. Add a few fresh spinach leaves and some cucumber slices for added crunch.

Roll It Up: Starting from one end, tightly roll the tortilla away from you, ensuring all the fillings stay inside. If necessary, apply a little extra cream cheese on the edge to help seal the roll.

Slice and Serve: Once all tortillas are rolled, use a sharp knife to cut each roll into 1 to 1.5-inch sections. Arrange them on a platter with the cut side facing up.

Storage: For meal prep, store the roll-ups in an airtight container in the fridge for up to 3 days. They can be enjoyed cold or at room temperature.

Add a Dipping Sauce (Optional): Serve with additional mustard or a side of ranch dressing for a delightful dip!
