Ingredients

6 large eggs

1 cup shredded sharp cheddar cheese

1/2 cup whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

8-10 slices of bacon

1/4 cup chopped chives (optional)

Cooking spray or olive oil for greasing the muffin tin

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Bacon: Cook the bacon slices in a skillet over medium heat until they are partially cooked and slightly crispy (about 5 minutes). Drain excess fat and let them cool slightly.

Grease the Muffin Tin: Spray a muffin tin with cooking spray or brush it with olive oil to prevent sticking.

Line with Bacon: Carefully wrap each muffin cup with a slice of bacon, spiraling it around the inside to cover the sides. If using smaller pieces of bacon, make sure they overlap slightly to ensure a good seal.

Mix the Egg Mixture: In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined. Stir in the shredded cheddar cheese and chopped chives if using.

Fill the Muffin Tin: Pour the egg mixture evenly into each bacon-lined muffin cup, filling them about 3/4 of the way full.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the egg bites are set in the center and the bacon is crispy.

Cool and Remove: Once cooked, remove the muffin tin from the oven and let it cool for 5 minutes. Carefully use a fork to loosen the edges and lift out the egg bites.

Serve: Serve warm as a delicious breakfast or appetizer option. You can garnish with extra chives or a dollop of sour cream if desired.
