Ingredients

For the Meatballs:

1 pound ground beef (or a mix of ground beef and pork)

1/2 cup breadcrumbs (preferably Italian-style)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried Italian herbs (oregano, basil, thyme)

For the Balsamic Glaze:

1 cup balsamic vinegar

2 tablespoons honey or brown sugar

1 tablespoon Dijon mustard

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare Meatball Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, onion powder, salt, black pepper, and Italian herbs. Mix gently with your hands until all the ingredients are well incorporated, but do not overmix.

Shape Meatballs: Using your hands, form the mixture into meatballs about 1 to 1.5 inches in diameter. Place them on the prepared baking sheet, leaving space between each meatball.

Bake the Meatballs: Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown.

Make the Balsamic Glaze: While the meatballs are baking, prepare the balsamic glaze. In a small saucepan over medium heat, combine the balsamic vinegar, honey (or brown sugar), Dijon mustard, and olive oil. Bring to a simmer and reduce the heat to low. Let the mixture simmer for about 10-15 minutes, or until it thickens to a syrupy consistency. Season with salt and pepper to taste.

Glaze the Meatballs: Once the meatballs are done baking, remove them from the oven. Drizzle or brush the balsamic glaze over the meatballs, ensuring they are well-coated.

Serve: Serve the baked balsamic meatballs hot, garnished with fresh basil leaves if desired. They pair wonderfully with pasta, on a sub sandwich, or over a bed of leafy greens.
