Baked Taco Stuffed Bell Peppers

4 large bell peppers (any color)

1 pound ground beef (or turkey)

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 packet taco seasoning

1 cup salsa

1 cup shredded cheddar cheese (plus extra for topping)

1/2 cup diced tomatoes

1/4 cup chopped fresh cilantro

Salt and pepper to taste

Optional toppings: sour cream, avocado, lime wedges

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.

      Cook the Meat: In a large skillet over medium heat, brown the ground beef (or turkey) until fully cooked. Drain excess fat if necessary.

        Mix the Filling: Add the cooked rice, black beans, corn, taco seasoning, salsa, diced tomatoes, and cilantro to the skillet. Stir well to combine and heat through. Season with salt and pepper to taste.

          Stuff the Peppers: Carefully spoon the taco mixture evenly into each bell pepper, pressing down slightly to pack the filling.

            Top with Cheese: Sprinkle shredded cheddar cheese on top of each stuffed pepper. If desired, add an extra layer of cheese for a gooey finish.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
