Ingredients

1.5 lbs beef sirloin, trimmed and cut into 1-inch cubes

1 cup fresh or frozen blueberries

1/2 cup beef broth

1/4 cup balsamic vinegar

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

Salt and pepper to taste

2 tablespoons olive oil

Fresh mint leaves for garnish (optional)

Instructions

Marinate the Beef: In a bowl, mix the soy sauce, balsamic vinegar, honey, Dijon mustard, minced garlic, rosemary, salt, and pepper. Add the beef cubes, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes (up to overnight for a deeper flavor).

Prepare the Blueberry Glaze: In a medium saucepan, combine the blueberries, beef broth, and a pinch of salt. Cook over medium heat until the blueberries start to burst and the mixture thickens slightly, about 5-7 minutes. Remove from heat and blend until smooth using an immersion blender or regular blender. Set aside.

Searing the Beef: Heat the olive oil in a large skillet over medium-high heat. Remove the beef from the marinade, letting any excess drip off. Sear the beef cubes in batches, for 3-4 minutes on each side until browned (do not overcrowd the pan). Remove the beef to a plate and set aside.

Glaze the Beef: In the same skillet, reduce the heat to medium, add the blueberry glaze to the pan drippings, and stir to combine. Return the seared beef to the skillet and toss to coat in the glaze. Cook for an additional 3-5 minutes, or until the beef is cooked to your desired doneness and heated through.

Serve: Plate the beef, drizzling extra blueberry glaze over the top. Garnish with fresh mint leaves if desired. Serve hot with your choice of sides, like mashed potatoes or sautéed green beans.
