4 medium zucchini

1 cup cooked chicken, shredded (rotisserie chicken works well)

1/2 cup buffalo sauce (adjust to taste)

1/4 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup blue cheese crumbles (optional)

2 green onions, chopped

Salt and pepper to taste

Olive oil for drizzling

Fresh parsley for garnish

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prep Zucchini: Cut the zucchinis in half lengthwise and scoop out the insides using a teaspoon to create a boat shape. Leave about 1/4-inch of the zucchini flesh on the sides to hold the stuffing.

      Season Zucchini: Brush the zucchini halves with a little olive oil and season with salt and pepper. Place them cut side up on a baking dish.
