1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup buttermilk

1 cup peeled and diced apples (preferably Granny Smith)

½ tsp ground cinnamon

½ cup caramel sauce (plus extra for drizzling)

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.

    Mix dry ingredients: In a bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.

      Cream butter and sugar: In another large bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy (about 3 minutes).

        Add eggs and vanilla: Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

          Combine wet and dry ingredients: Gradually add the flour mixture to the butter mixture, alternating with the buttermilk. Start and end with the flour mixture until just combined.

            Fold in apples: Gently fold in the diced apples until evenly distributed throughout the batter.

              Fill the cupcake liners: Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.

                Bake: Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted in the center comes out clean.

                  Cool down: Allow the cupcakes to cool in the pan for 5 minutes, then remove them and transfer to a wire rack to cool completely.
