3 cups all-purpose flour

1 packet (2 ¼ teaspoons) active dry yeast

1 cup warm milk (110°F)

1/4 cup granulated sugar

1/4 cup unsalted butter, melted

1 teaspoon salt

1 large egg

1 cup sharp cheddar cheese, shredded

1 cup roasted hatch green chilies, diced (fresh or canned)

1 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil (for greasing)

Optional: extra cheddar cheese for topping

Instructions
 

Activate the Yeast: In a small bowl, combine the warm milk and granulated sugar. Sprinkle the yeast on top and let it sit for about 5-10 minutes, until frothy.

    Make the Dough: In a large mixing bowl, whisk together the flour and salt. Once the yeast is activated, add it to the flour mixture along with the melted butter and egg. Mix until a sticky dough forms.

      Knead the Dough: Turn the dough out onto a floured surface and knead for about 5-7 minutes, until it becomes smooth and elastic. If the dough is too sticky, sprinkle with a little more flour as needed.

        Add Fillings: Incorporate the shredded cheddar cheese, diced hatch chilies, garlic powder, and onion powder into the dough. Knead gently until evenly distributed.

          First Rise: Lightly grease a large bowl with olive oil and place the dough inside, turning it to coat. Cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.

            Form the Rolls: Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into 12 equal pieces. Shape each piece into a ball and place them snugly in a greased 9x13-inch baking dish or round cake pan.

              Second Rise: Cover the rolls with a towel and let them rise again for about 30-45 minutes, or until they puff up again. Meanwhile, preheat the oven to 350°F (175°C).
