1 large head of cauliflower, cut into florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1 teaspoon Dijon mustard

1/2 teaspoon smoked paprika

1/2 cup breadcrumbs (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Cauliflower: In a large mixing bowl, toss the cauliflower florets with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.

      Roast the Cauliflower: Spread the cauliflower onto a baking sheet in a single layer and roast in the preheated oven for about 20 minutes, or until the florets are tender and starting to brown. Remove from oven and set aside.

        Make the Cheese Sauce: In a medium saucepan over medium heat, add the heavy cream. Stir in the shredded cheddar cheese, grated Parmesan cheese, Dijon mustard, smoked paprika, and additional salt and pepper to taste. Continue stirring until the cheese has melted and the sauce is smooth.

          Combine Cauliflower and Sauce: In a large baking dish, combine the roasted cauliflower with the cheese sauce, mixing gently until the cauliflower is well coated.

            Add Breadcrumbs (Optional): If using breadcrumbs, sprinkle them evenly over the top of the cauliflower and cheese mixture for an added crunch.
