Cheesy Baked Gnocchi

1 lb (450g) fresh or frozen gnocchi

2 cups marinara sauce (homemade or store-bought)

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cups fresh spinach (or arugula)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

Fresh basil leaves for garnish

Olive oil for greasing

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top (usually about 2-3 minutes). Drain and set aside.

      Sauté the Spinach: In a skillet, add a splash of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the spinach and cook until wilted. Season with salt, pepper, and dried oregano. Remove from heat and let cool slightly.

        Prepare the Cheese Mixture: In a large bowl, combine the ricotta cheese, half of the shredded mozzarella, and half of the grated Parmesan cheese. Mix well and season with salt, pepper, and red pepper flakes if using.

          Combine Ingredients: Gently fold the cooked gnocchi into the cheese mixture, followed by the sautéed spinach. Add the marinara sauce and mix everything until well combined.

            Bake the Gnocchi: Lightly grease a 9x13 inch (23x33 cm) baking dish with olive oil. Pour the gnocchi mixture into the dish and spread it out evenly. Top with the remaining mozzarella and Parmesan cheese.

              Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.

                Garnish and Serve: Remove from the oven, let it cool for a few minutes, and then garnish with fresh basil leaves. Serve hot and enjoy the cheesy goodness!
