Ingredients

4 large russet potatoes

1 lb ground beef

2 cups broccoli florets (fresh or frozen)

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup milk

2 tablespoons olive oil

1 tablespoon garlic powder

1 tablespoon onion powder

Salt and pepper to taste

2 tablespoons green onions, finely chopped (for garnish)

Instructions

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - Wash the russet potatoes thoroughly and poke several holes in each potato with a fork. Rub them with olive oil and sprinkle with salt.

        - Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender.

          Cook the Beef:

            - While the potatoes are baking, heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.

              - Stir in garlic powder, onion powder, salt, and pepper, and cook for another 2 minutes. Remove from heat and set aside.

                Steam the Broccoli:

                  - In a small pot, bring water to a boil. Place the broccoli florets in a steamer basket over the boiling water and cover. Steam for about 5-7 minutes or until they are tender but still bright green. Remove from heat and chop finely.

                    Combine the Mixture:

                      - In a mixing bowl, combine the cooked ground beef, steamed broccoli, shredded cheddar cheese, sour cream, and milk. Stir until well blended and creamy. Adjust seasoning with salt and pepper to taste.

                        Stuff the Potatoes:

                          - Once the potatoes are fully baked, carefully remove them from the oven. Allow them to cool for a few minutes. When cool enough to handle, slice open the top of each potato lengthwise and gently scoop out some of the flesh to create room for the filling, being careful not to break the skin.

                            - Fill each potato with the cheesy beef and broccoli mixture, mounding it generously.

                              Final Bake:

                                - Place the stuffed potatoes back in the oven for an additional 10-15 minutes until heated through and the cheese is melted and bubbly.

                                  Garnish and Serve:

                                    - Remove from the oven and let cool slightly. Garnish with finely chopped green onions for a fresh touch. Serve warm and enjoy your cheesy, hearty meal!
