4 medium potatoes, diced (Yukon Gold or Russet work great)

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon (or diced ham for a different twist)

1 medium onion, diced

1 red bell pepper, diced

3 large eggs

2 tablespoons olive oil

Salt and pepper, to taste

Fresh chives or parsley, chopped (for garnish)

Optional: Hot sauce for serving

Pre-cook the Potatoes: In a medium pot, place the diced potatoes and cover with water. Bring to a boil, then reduce heat and simmer for 10-12 minutes or until just fork-tender. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, sautéing for about 5 minutes until the onion is translucent and the peppers are softened.

      Add the Potatoes: Add the cooked potatoes and season with salt and pepper. Increase the heat to medium-high and cook for an additional 5-7 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside.

        Incorporate the Bacon: Stir in the cooked bacon (or ham) and mix well to combine. Make sure the bacon is evenly distributed throughout the skillet.

          Add the Eggs: Create small wells in the potato mixture and crack an egg into each well (you can adjust the number of eggs according to your preference). Reduce the heat to low, cover the skillet, and cook for about 5 minutes, or until the eggs are cooked to your preference.
