2 pounds of russet potatoes, peeled and thinly sliced

1 medium onion, finely chopped

3 cups sharp cheddar cheese, grated

2 cups heavy cream

1 cup whole milk

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

2 tablespoons unsalted butter, for greasing the baking dish

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter and set aside.

    Prepare the Potatoes: Slice the peeled russet potatoes into uniform 1/8-inch rounds using a mandoline or a sharp knife. This ensures even cooking.

      Sauté the Onions and Garlic: In a skillet over medium heat, add a tablespoon of butter. Once melted, add the chopped onions and cook until they are translucent (about 5 minutes). Stir in the minced garlic and cook for another minute, until fragrant. Remove from heat.

        Make the Cream Mixture: In a mixing bowl, whisk together the heavy cream, whole milk, thyme, paprika, salt, and black pepper until well combined.

          Layer the Ingredients:

            - Start by adding a thin layer of the potato slices to the bottom of the greased baking dish.

              - Sprinkle a third of the sautéed onions and garlic on top.

                - Add a layer of grated cheddar cheese (about 1 cup).

                  - Pour a third of the cream mixture over the cheese.
