Ingredients

20 jumbo pasta shells

2 cups cooked chicken, shredded

1 cup ricotta cheese

1 cup fresh spinach, chopped (or ½ cup frozen, thawed and drained)

1 cup shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 large egg

2 cups marinara sauce

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

Cook the Pasta: In a large pot of salted boiling water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool.

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, ricotta cheese, chopped spinach, ½ cup mozzarella cheese, Parmesan cheese, minced garlic, egg, Italian seasoning, salt, and pepper. Mix well until all ingredients are fully incorporated.

Stuff the Shells: Take each cooked pasta shell and carefully fill it with the chicken and spinach mixture. Use a spoon or a piping bag for easier filling.

Assemble the Dish: Spread 1 cup of marinara sauce evenly on the bottom of a 9x13-inch baking dish. Arrange the stuffed shells in a single layer over the sauce. Pour the remaining marinara sauce over the top and sprinkle with the remaining ½ cup mozzarella cheese.

Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Allow the stuffed shells to cool for a few minutes before serving. Garnish with fresh basil if desired for added flavor and color.
