Cheesy Spinach and Mushroom Stuffed Shells

20 large pasta shells

1 cup ricotta cheese

1 cup shredded mozzarella cheese, plus extra for topping

1/2 cup grated Parmesan cheese

2 cups fresh spinach, chopped

1 cup mushrooms, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish

Cook the Pasta Shells: In a large pot of salted boiling water, cook the pasta shells according to package instructions until al dente. Drain and set aside.

    Prepare the Filling: In a skillet, heat olive oil over medium heat. Add the minced garlic and chopped mushrooms, sautéing for about 3-4 minutes until the mushrooms are softened. Stir in the chopped spinach and cook until wilted. Season with salt, pepper, and Italian herbs. Remove from heat and let cool slightly.

      Mix the Cheese Filling: In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, and Parmesan cheese with the sautéed mushroom and spinach mixture. Mix until well combined.

        Stuff the Shells: Preheat your oven to 375°F (190°C). Take each cooked pasta shell and fill it generously with the cheese and spinach mixture. Place the stuffed shells seam-side up in a baking dish.

          Add Sauce and Cheese: Pour marinara sauce over the stuffed shells, covering them evenly. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbling and golden.

              Garnish and Serve: Remove from the oven and allow to cool for a few minutes. Garnish with fresh basil leaves before serving.
