9 lasagna noodles

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, plus extra for topping

1/2 cup grated Parmesan cheese

1 egg

1 teaspoon garlic powder

1 teaspoon Italian seasoning

2 cups marinara sauce (store-bought or homemade)

Salt and pepper, to taste

Olive oil, for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Noodles: Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to the package instructions until they're al dente. Drain and set aside.

      Prepare the Filling: In a mixing bowl, combine the chopped spinach, ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix everything until well combined.

        Assemble the Roll-Ups: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Take one lasagna noodle and lay it flat. Spread about 2-3 tablespoons of the spinach and cheese mixture evenly along the noodle. Carefully roll the noodle up and place it seam-side down in the baking dish. Repeat this process with the remaining noodles.

          Top with Sauce: Once all the roll-ups are placed in the dish, pour the remaining marinara sauce over the top. Make sure to cover all the roll-ups. Sprinkle extra mozzarella cheese on top.

            Bake: Drizzle a little olive oil over the top of the roll-ups and cover the baking dish with aluminum foil. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Serve: Let the lasagna roll-ups cool for a few minutes before serving. Garnish with fresh basil or parsley, if desired.
