Cheesy Veggie Quesadillas with Avocado Dip

For the Quesadillas:

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 bell pepper (any color), diced

1 medium zucchini, shredded

1 cup mushrooms, sliced

1 small red onion, diced

1 teaspoon olive oil

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

For the Avocado Dip:

2 ripe avocados

1 lime, juiced

1 clove garlic, minced

¼ teaspoon cumin

Salt to taste

2 tablespoons chopped fresh cilantro

Instructions
 

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced red onion, bell pepper, zucchini, and mushrooms. Sauté for about 5-7 minutes until the vegetables soften. Stir in ground cumin, smoked paprika, salt, and pepper. Cook for an additional 2 minutes. Remove from heat.

    Prepare the Quesadilla Filling: In a large mixing bowl, combine the sautéed vegetables with both the cheddar and mozzarella cheese. Mix well until the cheese is evenly distributed.

      Assemble Quesadillas: Lay one tortilla flat on a clean surface. Spoon a generous amount of the cheesy veggie filling onto half of the tortilla. Fold the other half over to create a half-moon shape. Repeat this process with the remaining tortillas and filling.

        Cook the Quesadillas: Wipe the skillet clean and return it to medium heat. Place the folded quesadilla in the skillet and cook for 3-4 minutes on one side until golden and crispy. Carefully flip and cook for another 3-4 minutes on the other side. Repeat with remaining quesadillas. Cut into wedges.

          Make the Avocado Dip: In a medium bowl, mash the ripe avocados until smooth. Stir in the lime juice, minced garlic, cumin, and salt to taste. Fold in the chopped cilantro.

            Serve: Arrange the quesadilla wedges on a platter and garnish with fresh cilantro. Serve warm with a generous side of avocado dip.
