Chicken Lettuce Wraps with Strawberry Glaze

1 cup diced bell peppers (mixed colors)

1/2 cup finely chopped onion

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 cup fresh strawberries, hulled and sliced

1/4 cup honey

1 teaspoon cornstarch mixed with 1 tablespoon water

1 head of iceberg or butter lettuce (for wraps)

Chopped scallions and sesame seeds (for garnish)

Prepare the Strawberry Glaze: In a small saucepan over medium heat, combine the sliced strawberries and honey. Cook for about 5-7 minutes, stirring occasionally, until the strawberries break down and the mixture thickens slightly. Add the cornstarch slurry (cornstarch mixed with water) and stir until the glaze thickens to your liking. Remove from heat and set aside.

    Cook the Chicken Filling: In a large skillet over medium-high heat, add the sesame oil. Once hot, add the diced onion, garlic, and ginger. Sauté for about 2-3 minutes until fragrant and the onion becomes translucent.

      Add the Ground Chicken: Increase the heat to high and add the ground chicken to the skillet. Cook for 5-7 minutes, breaking it up with a spatula, until fully cooked and browned.

        Incorporate the Vegetables and Sauce: Stir in the diced bell peppers. Add the soy sauce, hoisin sauce, and rice vinegar. Mix well and cook for an additional 2-3 minutes until the bell peppers are slightly tender but still crisp.
