1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

1 tablespoon lemon juice

2 teaspoons garam masala

2 teaspoons cumin

2 teaspoons paprika

1 teaspoon turmeric

1 teaspoon chili powder (adjust for spice preference)

Salt, to taste

For the Masala Sauce:

2 tablespoons vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece ginger, grated

1 teaspoon cumin seeds

1 can (14 oz) crushed tomatoes

1 cup coconut milk or heavy cream

1 teaspoon sugar

Salt, to taste

Fresh cilantro, chopped (for garnish)

For the Bowls:

2 cups cooked basmati rice or cauliflower rice

1 cup steamed broccoli florets (or your choice of veggies)

Lime wedges (for serving)

Marinate the Chicken:

    In a mixing bowl, combine yogurt, lemon juice, garam masala, cumin, paprika, turmeric, chili powder, and salt. Add the chicken pieces and ensure they are well coated. Cover and refrigerate for at least 1 hour, or overnight for maximum flavor.

      Cook the Chicken:

        Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken in a single layer. Cook for about 5-7 minutes on each side until cooked through and slightly charred. Remove the chicken and set aside.

          Prepare the Masala Sauce:

            In the same skillet, add vegetable oil, followed by chopped onions. Sauté until translucent and golden brown, about 5-6 minutes. Stir in garlic and ginger; cook for another minute until fragrant.

              Add Spices and Tomatoes:
