Ingredients

1 cup fresh strawberries, hulled and sliced

1 tablespoon granulated sugar (adjust based on sweetness preference)

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

1 pre-made pie crust (store-bought for convenience or homemade)

1 tablespoon butter, cut into small pieces

1 egg (for egg wash)

Optional: powdered sugar, for dusting

Instructions

Prepare the Strawberries: In a mixing bowl, combine the sliced strawberries, granulated sugar, lemon juice, vanilla extract, and cornstarch. Toss gently until the strawberries are well coated. Set aside to macerate for at least 20 minutes, which helps extract some juice and enhances flavor.

Roll Out the Dough: If using a store-bought pie crust, roll it out on a lightly floured surface to about a 12-inch round. If making your own crust, roll it out to the same dimension keeping it about 1/8 inch thick.

Assemble the Galette: Transfer the rolled-out dough to a parchment-lined baking sheet. Spoon the prepared strawberry mixture onto the center, leaving a border of about 2 inches around the edges. Fold the edges of the dough over the filling, pleating it as necessary to create a rustic look, and allow the center of the strawberries to be exposed.

Add Butter and Egg Wash: Dot the strawberry filling with small pieces of butter. In a small bowl, beat the egg and brush the mixture over the crust to give it a beautiful golden color when baked.

Chill and Bake: Place the assembled galette in the fridge for about 30 minutes to firm up the dough before baking. Preheat your oven to 400°F (200°C). Once chilled, bake the galette in the preheated oven for 25-30 minutes or until the crust is golden brown and the strawberries are bubbling.

Cool and Chill: Remove the galette from the oven and allow it to cool for at least 10 minutes. For a chilled dessert, transfer the galette to the refrigerator and let it cool completely before serving.

Serve: Slice the chilled galette, dust with powdered sugar if desired, and enjoy as a delightful summer dessert.
