1 cup rolled oats

1/2 cup canned pumpkin puree

1/2 cup natural peanut butter (or almond butter)

1/4 cup honey or maple syrup

1/4 cup unsweetened cocoa powder

1/2 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp sea salt

1/2 cup mini dark chocolate chips

1/4 cup chopped nuts (walnuts or pecans) (optional)

Instructions
 

In a large mixing bowl, combine the rolled oats, pumpkin puree, peanut butter, honey (or maple syrup), cocoa powder, vanilla extract, cinnamon, nutmeg, and sea salt.

    Use a wooden spoon or spatula to mix the ingredients until they are well combined and form a sticky dough.

      Fold in the mini dark chocolate chips and chopped nuts (if using), ensuring they're evenly distributed throughout the mixture.

        Use your hands to shape the mixture into small balls, about 1 inch in diameter. You should get around 16-20 energy balls, depending on size preference.

          Place the energy balls on a baking sheet lined with parchment paper, spaced apart to allow for easy handling.

            Once all the balls are formed, refrigerate them for at least 30 minutes to firm up.
