For the Pie Dough:

2 ½ cups all-purpose flour

1 tsp salt

1 tsp granulated sugar

1 cup unsalted butter, chilled and cubed

6-8 tbsp ice water

For the Apple Filling:

3 medium-sized apples (Granny Smith or Honeycrisp), peeled and diced

1/3 cup brown sugar

1 tsp cinnamon

1/4 tsp nutmeg

1 tbsp lemon juice

1 tbsp cornstarch

Pinch of salt

For the Egg Wash:

1 egg, beaten

1 tbsp milk

For Dusting:

Granulated sugar

Extra cinnamon

Instructions
 

Make the Pie Dough:

    - In a large bowl, whisk together flour, salt, and sugar.

      - Add the chilled butter and cut it into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

        - Gradually add ice water, one tablespoon at a time, mixing until the dough just holds together.

          - Divide the dough into two equal discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

            Prepare the Apple Filling:

              - In a mixing bowl, combine the diced apples, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and a pinch of salt. Toss until the apples are well coated and set aside to let the flavors meld.

                Roll Out the Dough:

                  - Preheat the oven to 400°F (200°C) and line two baking sheets with parchment paper.

                    - On a lightly floured surface, roll out one disc of dough to about 1/8 inch thick. Using a 4-5 inch round cookie cutter, cut out circles and place them on the prepared baking sheets.

                      - Repeat with the second disc of dough.

                        Assemble the Hand Pies:

                          - Place a tablespoon of the apple filling in the center of each dough circle, being careful not to overfill.

                            - Fold the dough over to make a half-moon shape and crimp the edges with a fork to seal.

                              - Cut a small slit in the top of each pie to allow steam to escape.

                                Egg Wash and Bake:

                                  - In a small bowl, mix the beaten egg with milk to create the egg wash. Brush the tops of the hand pies with the egg wash.

                                    - Sprinkle with granulated sugar and a pinch of cinnamon for extra sweetness.

                                      - Bake in the preheated oven for 20-25 minutes, or until golden brown.

                                        Cool and Serve:

                                          - Allow the hand pies to cool slightly before serving. Enjoy them warm or at room temperature.
