Ingredients

For the Cherry Filling:

4 cups fresh or frozen cherries, pitted

1 cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

¼ teaspoon salt

For the Cobbler Topping:

1 cup all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

¼ cup granulated sugar

½ cup whole milk

1/3 cup unsalted butter, melted

1 teaspoon vanilla extract

To Serve:

Vanilla ice cream (store-bought or homemade)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Cherry Filling: In a large mixing bowl, combine the pitted cherries, sugar, cornstarch, lemon juice, vanilla extract, and salt. Mix well until the cherries are completely coated. Transfer the mixture into a greased 9-inch round baking dish, spreading it evenly.

Make the Cobbler Topping: In another bowl, whisk together the flour, baking powder, salt, and sugar. Add the whole milk, melted butter, and vanilla extract to the dry ingredients. Stir gently until just combined; do not overmix.

Assemble the Cobbler: Spoon dollops of the batter over the cherry filling, trying to cover as much of the filling as possible. It doesn't have to be perfect—some gaps are fine!

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and a toothpick inserted into the batter comes out clean.

Cool: Once done, remove from the oven and allow to cool for about 10-15 minutes. This will help the filling set slightly.

Serve: Scoop generous portions of the warm cherry cobbler into bowls. Top each serving with a generous scoop of vanilla ice cream.

Optional Garnish: Drizzle with a bit of cherry sauce or sprinkle fresh mint leaves if desired.
