Ingredients

1 cup orzo pasta

1 ½ cups cherry tomatoes, halved

1 cucumber, diced

½ red onion, finely chopped

1 bell pepper (any color), diced

1 cup feta cheese, crumbled

½ cup Kalamata olives, pitted and sliced

¼ cup fresh parsley, chopped

¼ cup fresh basil, chopped

½ cup extra-virgin olive oil

3 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Lemon wedges, for serving (optional)

Instructions

Cook the Orzo: In a large pot of boiling salted water, add the orzo pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Vegetables: While the orzo is cooking, chop the cherry tomatoes, cucumber, red onion, and bell pepper. Place them in a large mixing bowl.

Combine the Ingredients: Add the cooled orzo to the bowl of vegetables. Then, fold in the crumbled feta cheese, sliced Kalamata olives, chopped parsley, and basil.

Make the Dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust seasoning to taste.

Dress the Salad: Drizzle the dressing over the orzo salad and toss gently to combine, ensuring everything is coated evenly.

Chill and Serve: Let the salad sit in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve chilled, garnished with lemon wedges if desired.
