Ingredients

2 cups rolled oats

1 cup whole wheat flour

1/2 cup brown sugar (packed)

1/4 cup honey or maple syrup

1/2 cup unsalted butter (melted)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1 cup fresh or dried cranberries

1 cup diced apples (about 2 medium apples)

1/4 cup chopped nuts (optional, walnuts or pecans)

1/2 cup apple sauce

Instructions

Preheat the oven to 350°F (175°C). Grease or line a 9x9 inch baking dish with parchment paper for easy removal.

Mix dry ingredients: In a large bowl, combine the rolled oats, whole wheat flour, brown sugar, baking powder, salt, and cinnamon. Stir until well combined.

Add wet ingredients: In a separate bowl, whisk together melted butter, honey (or maple syrup), vanilla extract, and apple sauce. Pour this mixture into the dry ingredients and mix until just combined.

Fold in fruits and nuts: Gently fold in the cranberries, diced apples, and chopped nuts (if using) until evenly distributed throughout the mixture.

Transfer to the baking dish: Pour the combination into the prepared baking dish, spreading it out evenly with a spatula.

Bake: Place in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

Cool and slice: Remove from the oven and allow to cool in the pan for about 10 minutes. Lift the bars out using the parchment paper and let cool on a wire rack completely before slicing into squares or bars.

Serve and enjoy: These bars can be stored in an airtight container at room temperature for up to a week, or refrigerated for longer freshness. Great for a quick breakfast or snack on the go!
