Creamy Avocado Pasta Sauce

Ingredients
  

2 ripe avocados

2 cloves garlic, peeled

1/4 cup fresh basil leaves (plus extra for garnish)

1/4 cup freshly squeezed lemon juice

1/4 cup extra virgin olive oil

1/4 tsp red pepper flakes (optional, for a kick)

Salt and freshly cracked black pepper, to taste

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

12 oz pasta of choice (spaghetti, fettuccine, or penne)

Cherry tomatoes, halved (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add your choice of pasta and cook according to the package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Sauce: In a food processor or blender, combine the ripe avocados, garlic cloves, fresh basil leaves, lemon juice, and olive oil. Blend until smooth and creamy, scraping down the sides as needed.

      Season the Sauce: Once creamy, add red pepper flakes (if using), salt, and black pepper to taste. Blend again until fully combined. If the sauce is too thick, gradually add some of the reserved pasta water until you reach your desired consistency.

        Combine Pasta and Sauce: In a large mixing bowl, add the cooked pasta and pour the creamy avocado sauce over it. Gently toss until the pasta is evenly coated in the sauce.

          Serve: Plate the pasta and sprinkle grated Parmesan cheese on top. Garnish with additional fresh basil and halved cherry tomatoes for a pop of color and freshness.
