Creamy Broccoli Rice Bake

2 cups cooked rice (white or brown)

3 cups fresh broccoli florets (steamed)

1 cup shredded sharp cheddar cheese

1 cup cream of mushroom soup (or homemade)

½ cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

1 cup breadcrumbs (panko for extra crunch)

2 tablespoons olive oil or melted butter

¼ cup grated Parmesan cheese

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray or olive oil.

    Prepare the Broccoli: In a pot of boiling salted water, blanch the broccoli florets for 2 minutes until bright green and slightly tender. Immediately transfer them to an ice bath to stop the cooking process. Drain well.

      Mix the Creamy Base: In a large mixing bowl, combine the cream of mushroom soup, sour cream, garlic powder, onion powder, black pepper, and salt. Stir until well blended.

        Combine Ingredients: In the same bowl, fold in the cooked rice, steamed broccoli, and ¾ cup of the shredded cheddar cheese. Mix gently until everything is evenly coated.

          Transfer to Baking Dish: Spread the rice and broccoli mixture evenly into the prepared baking dish.

            Prepare Topping: In a small bowl, combine the breadcrumbs, remaining ¼ cup of cheddar cheese, olive oil (or melted butter), and grated Parmesan cheese. Mix well until the breadcrumbs are coated.

              Assemble the Bake: Sprinkle the breadcrumb mixture evenly over the rice and broccoli layer in the baking dish.

                Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the edges are bubbling.
