12 oz bowtie pasta

1 lb boneless, skinless chicken breasts, sliced into strips

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 medium onion, finely chopped

3 garlic cloves, minced

1 red bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cup shredded parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the bowtie pasta according to package instructions until al dente. Drain and set aside.

    Season the Chicken: In a mixing bowl, toss the sliced chicken breasts with the Cajun seasoning until evenly coated.

      Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken strips and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the chopped onion and diced red bell pepper. Sauté for about 4-5 minutes until the onion is translucent. Add the minced garlic and cook for an additional 1 minute, until fragrant.

          Make the Sauce: Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Reduce heat to low and stir in the heavy cream, cherry tomatoes, and shredded parmesan cheese. Mix well and let the sauce thicken slightly for about 3-4 minutes. Season with salt and pepper to taste.

            Combine Ingredients: Add the cooked bowtie pasta and the browned chicken back into the skillet. Toss everything together until the pasta is coated with the creamy sauce.
