12 oz fettuccine pasta

2 boneless, skinless chicken breasts (sliced into strips)

2 tablespoons Cajun seasoning (adjust for spice preference)

2 tablespoons olive oil

1 medium onion (diced)

3 cloves garlic (minced)

1 bell pepper (sliced, any color)

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes (halved)

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley (chopped, for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Season the Chicken: In a bowl, toss the chicken strips with Cajun seasoning until well coated.

      Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Sauté Veggies: In the same skillet, add the diced onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and sliced bell pepper, cooking for an additional 2-3 minutes until softened.

          Create the Sauce: Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and let it cook for about 3-4 minutes, allowing the sauce to thicken slightly.

            Combine Ingredients: Add the cherry tomatoes and cooked chicken back into the skillet, mixing everything together. Cook for another 2-3 minutes to heat through.

              Finish the Dish: Stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.

                Combine with Pasta: Gently toss the cooked fettuccine into the sauce until well coated.

                  Garnish and Serve: Serve the creamy Cajun chicken pasta hot, garnished with fresh parsley.
