Creamy Chicken Marsala with Mushrooms

Ingredients
  

4 boneless, skinless chicken breasts

1 cup all-purpose flour, for dredging

2 tablespoons olive oil

2 tablespoons unsalted butter

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces cremini mushrooms, sliced

1 cup Marsala wine

1 cup heavy cream

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare Chicken: Season the chicken breasts with salt and pepper. Dredge each piece in flour, shaking off any excess. This will help create a nice crust when cooked.

    Sear Chicken: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Once hot, add the chicken breasts and cook for about 5-6 minutes on each side until golden brown and cooked through. Remove from the skillet, and keep warm.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of butter. Once melted, add the chopped onion and cook until translucent, about 3 minutes. Stir in the minced garlic and cook for an additional 30 seconds.

        Cook Mushrooms: Add the sliced cremini mushrooms to the skillet. Sauté until they are browned and have released their moisture, about 5-7 minutes.

          Deglaze with Marsala: Pour in the Marsala wine, scraping the bottom of the skillet to release any brown bits. Bring the mixture to a simmer and let it cook for about 3-4 minutes until the wine has reduced slightly.

            Make the Cream Sauce: Reduce heat to medium-low. Stir in the heavy cream and dried thyme, mixing well until combined. Let the sauce simmer, allowing it to thicken slightly, about 5 minutes. Adjust seasoning with salt and pepper to taste.

              Combine: Add the seared chicken back to the skillet, spooning the creamy sauce over the chicken. Cook for another 2-3 minutes until the chicken is heated through.

                Garnish & Serve: Remove the skillet from heat. Garnish with freshly chopped parsley before serving. This dish pairs perfectly with pasta, mashed potatoes, or a simple side salad.
