1 lb boneless, skinless chicken breasts (diced)

1 cup wild rice blend (uncooked)

1 medium onion (diced)

2 cloves garlic (minced)

3 carrots (sliced)

2 celery stalks (sliced)

1 tsp dried thyme

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

6 cups chicken broth

1 cup heavy cream

2 tbsp olive oil

1 tbsp butter

1 cup baby spinach (fresh)

Fresh parsley for garnish (chopped, optional)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil and butter over medium heat. Add the diced onion, garlic, carrots, and celery. Cook for about 5-7 minutes or until the vegetables are tender.

    Cook the Chicken: Add the diced chicken to the pot and season with thyme, oregano, salt, and pepper. Cook until the chicken is lightly browned, about 5 minutes, stirring occasionally.

      Add Rice and Broth: Stir in the wild rice blend, and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 30-40 minutes, or until the rice is tender and the chicken is cooked through.
