1 large head of cauliflower, cut into florets

4 cloves of garlic, peeled

½ cup of cream cheese, softened

¼ cup of unsalted butter

½ cup of grated Parmesan cheese

½ cup of milk (or more, for desired creaminess)

Salt and pepper to taste

2 tablespoons of chopped fresh chives (for garnish)

A pinch of nutmeg (optional)

Prepare the Cauliflower: Fill a large pot with water and bring it to a boil. Add the cauliflower florets and garlic cloves. Boil for 10-12 minutes or until the cauliflower is fork-tender.

    Drain and Dry: Once cooked, carefully drain the cauliflower and garlic in a colander and let it sit for a few minutes to steam dry. This helps to avoid watery mashed cauliflower.
