Ingredients

12 ounces penne pasta

2 tablespoons olive oil

4 cloves garlic, minced

6 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

¼ teaspoon red pepper flakes (optional)

Zest of 1 lemon

Fresh lemon juice (from about ½ lemon)

Fresh basil leaves, for garnish (optional)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the penne according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.

Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes, being careful not to let it burn.

Add Spinach: Add the chopped spinach to the skillet and cook, stirring often, until wilted, about 3-4 minutes.

Prepare Cream Sauce: Pour in the heavy cream and stir to combine. Gradually add in the grated Parmesan cheese, stirring continuously until melted and the sauce is creamy. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

Season the Sauce: Season the sauce with salt, black pepper, red pepper flakes (if using), zest of lemon, and fresh lemon juice. Mix well to incorporate all flavors.

Combine Pasta and Sauce: Add the cooked penne to the skillet, tossing until well coated with the creamy garlic spinach sauce. Cook for an additional 2 minutes over low heat to allow the pasta to absorb flavors.

Serve: Divide the creamy garlic spinach penne among serving plates. Garnish with fresh basil leaves, extra Parmesan cheese, and a sprinkle of lemon zest for a bright finish.
