Creamy Green Chili Pasta Bites

8 ounces elbow macaroni

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 can (4 ounces) diced green chilies

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

1/2 cup breadcrumbs (optional, for topping)

Cooking spray or additional olive oil (for greasing)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente according to package instructions. Drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and stir for an additional minute until fragrant.

      Combine Greens and Cream: Stir in the diced green chilies, heavy cream, sharp cheddar cheese, and cream cheese into the skillet. Cook on low heat, stirring until the cheeses melt and the mixture is smooth.

        Season the Mixture: Add the ground cumin, smoked paprika, salt, and pepper to taste. Stir until well combined.

          Mix Pasta and Sauce: Add the cooked elbow macaroni to the cheese sauce, stirring until the pasta is well coated.
