Creamy Lemon Dill Chickpea Pasta

8 oz pasta of your choice (fusilli, penne, or spaghetti)

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream or a non-dairy alternative (like coconut cream)

1 lemon, zested and juiced

1 teaspoon Dijon mustard

1 teaspoon of dried dill (or 2 tablespoons of fresh dill, chopped)

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional for garnish)

Fresh dill sprigs (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta cooking water.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.

      Add Chickpeas: Add the drained chickpeas to the skillet. Stir and let them cook for about 5 minutes, allowing them to get slightly crispy and golden.
