Creamy Lemon Ricotta Pasta

12 oz pasta (spaghetti or fettuccine)

1 cup ricotta cheese

Zest of 1 large lemon

1/4 cup freshly squeezed lemon juice (about 2 lemons)

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Extra lemon zest for serving

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant but not browned.

      Add Ricotta and Lemon: Turn the heat to low, then add the ricotta cheese, lemon zest, and lemon juice to the skillet. Stir until well combined and creamy. If the mixture is too thick, add a bit of the reserved pasta water to reach desired consistency.

        Combine Pasta and Sauce: Add the drained pasta to the skillet along with the cherry tomatoes. Toss everything together gently, allowing the heat of the pasta to warm the tomatoes and combine the flavors. Adjust the sauce's creaminess with more reserved pasta water, if necessary.

          Finishing Touches: Stir in the grated Parmesan cheese, and season with salt and pepper to taste. Remove from heat.

            Serve: Plate the pasta and garnish with fresh basil leaves and additional lemon zest. Serve immediately while warm.
