1 cup fresh ricotta cheese

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 tablespoon honey (plus extra for drizzling)

1 teaspoon vanilla extract

4 slices of artisan bread (sourdough or ciabatta works well)

1 tablespoon olive oil

Sea salt, to taste

Fresh mint leaves, for garnish (optional)

Fresh berries (strawberries, blueberries, or raspberries), for topping

Prepare the Lemon Ricotta: In a mixing bowl, combine the ricotta cheese, lemon zest, lemon juice, honey, and vanilla extract. Mix until smooth and creamy. Taste and adjust sweetness by adding more honey if desired.

    Toast the Bread: Preheat your oven to 400°F (200°C) or use a toaster. Drizzle the slices of bread with olive oil on both sides. Place them on a baking sheet and toast in the oven for about 5-7 minutes, or until golden brown and crispy. If using a toaster, toast until golden.
