Creamy Potato Bacon Chowder

4 medium potatoes (peeled and diced)

6 strips of bacon (chopped)

1 medium onion (diced)

2 cloves garlic (minced)

3 cups chicken broth

1 cup heavy cream

1 cup whole milk

2 cups corn (fresh or frozen)

1 tsp dried thyme

1 tsp smoked paprika

Salt and pepper to taste

2 green onions (chopped, for garnish)

Fresh parsley (chopped, for garnish)

Instructions
 

In a large pot over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and place it on a plate lined with paper towels to drain. Leave about 2 tablespoons of bacon fat in the pot.

    Add the diced onion to the pot and sauté for about 5 minutes, or until it's translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Add the diced potatoes to the pot, followed by the thyme, smoked paprika, salt, and pepper. Stir well to combine all the flavors.

        Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce heat to a simmer and let it cook for about 15-20 minutes or until the potatoes are tender.

          Once the potatoes are cooked through, use a potato masher or immersion blender to slightly mash some of the potatoes for a creamier texture — leave some chunks for added texture.

            Stir in the corn, heavy cream, and milk. Allow the chowder to simmer for an additional 5 minutes.

              Taste and adjust seasoning if necessary. Stir in the reserved crispy bacon just before serving.

                Garnish each serving with chopped green onions and fresh parsley for a pop of color and flavor.
