Creamy Roasted Garlic Mashed Potatoes

2 pounds russet potatoes, peeled and cubed

1 whole head of garlic

4 tablespoons unsalted butter

1 cup heavy cream

½ cup sour cream

Salt and black pepper, to taste

Fresh chives or parsley, for garnish (optional)

Olive oil, for drizzling (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the whole head of garlic, drizzle a bit of olive oil over it, and wrap it in aluminum foil. Place it in the oven and roast for 30-35 minutes, or until the cloves are soft and golden brown. Remove from the oven and let cool slightly.

    Boil the Potatoes: While the garlic is roasting, place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 15-20 minutes, or until the potatoes are fork-tender.

      Drain and Mash: Once the potatoes are cooked, drain them and return them to the pot. Squeeze the roasted garlic cloves out of their skins into the pot with the potatoes (you should have about 4-6 cloves).

        Add Cream and Butter: Add the unsalted butter, heavy cream, and sour cream to the potatoes. Use a potato masher or a hand mixer to mash until creamy and smooth. Adjust the texture by adding more cream if desired.

          Season: Season the mash with salt and black pepper to taste. Mix thoroughly to incorporate the seasonings.

            Serve: Transfer the creamy mashed potatoes to a serving bowl. Optionally, drizzle with a little olive oil and sprinkle with fresh chives or parsley for garnish. Serve warm alongside your favorite main dish!
