Creamy Skillet Apple Cinnamon Oatmeal

Ingredients
  

1 cup rolled oats

2 cups milk (or dairy-free alternative)

1 medium apple, cored and diced

1 tablespoon brown sugar (or maple syrup)

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 tablespoon butter (or coconut oil for dairy-free)

1/4 cup chopped walnuts or pecans (optional)

1 teaspoon vanilla extract

Fresh apple slices and extra cinnamon for topping (optional)

Instructions
 

In a medium skillet, melt the butter over medium heat.

    Add the diced apple to the skillet and sauté for about 3-4 minutes, or until they start to soften.

      Sprinkle in the brown sugar, ground cinnamon, nutmeg, and salt. Stir well and cook for another minute until the apples are coated and fragrant.

        Pour the rolled oats into the skillet and stir them into the apple mixture.

          Add the milk and vanilla extract, bringing the mixture to a gentle simmer.

            Reduce the heat to low and cook for about 5-7 minutes, stirring occasionally, until the oats are creamy and have absorbed most of the liquid.

              If desired, add in the chopped walnuts or pecans for some crunch and extra flavor.

                Serve warm, topped with fresh apple slices and a sprinkle of cinnamon if you like.
