Creamy Spinach and Artichoke Tortellini

12 oz cheese tortellini (fresh or frozen)

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and roughly chopped

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Fresh parsley, for garnish

Instructions
 

Cook the Tortellini: In a large pot of boiling salted water, cook the tortellini according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and sauté until wilted, about 2-3 minutes.

      Add Artichokes: Stir in the chopped artichoke hearts, and cook for another 2 minutes until they are warmed through.

        Make the Sauce: Reduce the heat to low and pour in the heavy cream. Gradually add the Parmesan cheese, stirring until melted and smooth. If desired, add red pepper flakes for a spicy kick. Season with salt and pepper to taste.
