Creamy Sun-Dried Tomato Chicken Pasta

8 oz (225g) pasta (penne or fettuccine recommended)

2 tablespoons olive oil

2 boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

4 cloves garlic, minced

1 cup sun-dried tomatoes in oil, drained and chopped

1 cup heavy cream

½ cup chicken broth

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 cup fresh spinach leaves

Fresh basil, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Once done, reserve about ½ cup of the pasta water, then drain the rest. Set aside.

    Prepare the Chicken: In a large skillet over medium-high heat, heat the olive oil. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Tomatoes: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Then, add the sun-dried tomatoes and cook for an additional 2-3 minutes.

        Make the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer. Add the grated Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is creamy.

          Combine Ingredients: Return the cooked chicken to the skillet. Add the cooked pasta and fresh spinach, tossing everything together to coat the pasta and chicken in the creamy sauce. If the sauce seems too thick, add a bit of the reserved pasta water until you reach the desired consistency.

            Serve: Taste and adjust seasoning with additional salt and pepper if needed. Serve hot, garnished with fresh basil leaves and extra Parmesan cheese if desired.
