8 oz pasta (penne or fusilli works great)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 cup heavy cream

1 teaspoon sugar (to balance acidity)

1 teaspoon dried Italian herbs (oregano, thyme, etc.)

Salt and pepper to taste

1 cup freshly grated Parmesan cheese

1 cup fresh basil leaves, chopped (reserve some for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the rest and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Tomatoes: Pour in the can of diced tomatoes (with juices) and stir in the sugar, dried Italian herbs, salt, and pepper. Let this mixture simmer for about 5 minutes to develop flavors.

        Make it Creamy: Lower the heat and stir in the heavy cream, mixing until well combined. Let it simmer further for 3-4 minutes, allowing the sauce to thicken slightly.
