2 large chicken breasts, boneless and skinless

1 cup breadcrumbs (preferably gluten-free)

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs

1 cup marinara sauce (plus extra for serving)

4 large flour tortillas or wraps

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish (optional)

Cooking spray or olive oil for air frying

Prep the Chicken: Begin by preheating your air fryer to 380°F (193°C). While it's heating, flatten the chicken breasts to an even thickness using a meat mallet or rolling pin, ensuring they cook evenly.

    Prepare the Breading: In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. In another dish, whisk the eggs until well beaten.

      Bread the Chicken: Dip each chicken breast into the egg mixture, allowing any excess to drip off. Then, dredge it in the breadcrumb mixture, pressing lightly to ensure it's well-coated. Place the breaded chicken on a plate and let it sit for about 5 minutes—this helps the coating adhere better.

        Air-Fry the Chicken: Spray the air fryer basket lightly with cooking spray. Place the breaded chicken breasts into the basket in a single layer (you may need to do this in batches). Lightly spray the tops of the chicken with cooking spray as well. Cook for 10 minutes, then carefully flip the chicken and air fry for another 7-10 minutes until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
