Ingredients

1 lb chicken breast tenders

1 cup buttermilk

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup all-purpose flour

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp salt

¼ tsp black pepper

¼ tsp cayenne pepper (optional, for spice)

Olive oil spray (or a light drizzle of olive oil)

For Honey Mustard Dipping Sauce:

½ cup Dijon mustard

¼ cup honey

1 tbsp apple cider vinegar

Pinch of salt and pepper to taste

Instructions

Marinate the Chicken: In a bowl, combine buttermilk, salt, and pepper. Add the chicken tenders, ensuring they are well coated. Cover and refrigerate for at least 1 hour (or overnight for best flavor).

Prepare the Breading Station: In a shallow bowl, mix the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. In another bowl, place the breadcrumbs.

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil spray.

Bread the Chicken: Remove the chicken tenders from the marinade, allowing excess buttermilk to drip off. Dredge each tender in the seasoned flour, shaking off any excess. Then, dip it into the breadcrumbs, pressing gently to ensure the crumbs adhere well. Repeat for all tenders.

Bake the Chicken: Arrange the breaded chicken tenders on the prepared baking sheet in a single layer. Lightly spray the tops with olive oil spray or drizzle with olive oil to help achieve crispiness. Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until the chicken is golden brown and cooked through (internal temperature should reach 165°F/74°C).

Prepare the Honey Mustard Sauce: In a small bowl, whisk together Dijon mustard, honey, apple cider vinegar, salt, and pepper until well combined. Taste and adjust the seasoning if needed.

Serve: Once the chicken tenders are crispy and golden, remove them from the oven. Serve warm with the honey mustard dipping sauce on the side for a delightful crunch!
