Crispy BBQ Chicken Quesadillas

2 cups cooked chicken, shredded (rotisserie chicken works great)

1/2 cup BBQ sauce (choose your favorite brand or homemade)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup bell pepper, diced (any color)

8 flour tortillas (8-inch)

2 tablespoons olive oil (for frying)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Optional: Fresh cilantro, chopped (for garnish)

Optional: Sour cream and guacamole (for serving)

Instructions
 

Preheat the skillet: Place a large non-stick skillet over medium heat and add 1 tablespoon of olive oil, allowing it to heat up.

    Mix the chicken filling: In a mixing bowl, combine the shredded chicken with BBQ sauce, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Stir until evenly coated.

      Assemble the quesadillas: On one half of each tortilla, sprinkle a mix of cheddar and mozzarella cheese, add a generous amount of the BBQ chicken mixture, some sliced red onions, and diced bell pepper. Top it off with another layer of cheese, then fold the other half of the tortilla over the filling.

        Cook the quesadillas: Carefully place the folded quesadilla into the heated skillet. Cook for about 3-4 minutes on one side or until golden brown and crispy. Flip and add the remaining olive oil to the skillet. Cook for another 3-4 minutes until the second side is also golden and crispy. Repeat with the remaining tortillas.

          Cut and serve: Remove the quesadillas from the skillet and let them rest for a minute. Cut them into wedges and garnish with fresh cilantro, if desired.

            Enjoy: Serve warm with sour cream and guacamole on the side for dipping.
