Crispy BBQ Ranch Chickpea Wraps

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/2 cup barbecue sauce

1/4 cup ranch dressing (store-bought or homemade)

4 large whole wheat or spinach tortillas

1 cup mixed greens (lettuce, spinach, kale)

1/2 cup shredded carrots

1/2 cup cherry tomatoes, halved

1/2 avocado, sliced

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Chickpeas: In a medium bowl, combine the drained chickpeas, olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir until the chickpeas are well-coated.

      Roast Chickpeas: Spread the seasoned chickpeas on a baking sheet in a single layer and roast in the preheated oven for 20-25 minutes, or until crispy, shaking the pan halfway through cooking. The chickpeas should be golden and crunchy.

        Mix Sauces: While the chickpeas are roasting, in a small bowl, mix together the barbecue sauce and ranch dressing until well combined.

          Prepare Wraps: Once the chickpeas are done, remove them from the oven and let them cool slightly. Lay out the tortillas and spread a generous amount of the BBQ ranch sauce mixture onto each one.
